Stencils are extremely versatile decorating tools and can be used on a number of different baked goods and foods as well as a number of craft applications.
Simple Stencil 'Rules'
- Always ensure that your stencil is stable or not likely to slip or move when using it. If it's not secure you can end up with a smudged design.
- Clean the stencil between uses, even if it's just a simple wipe. This ensures that you don't transfer any mess from one stencil design to another.
- Be gentle brushing, sponging or wiping over any design elements that could lift or bend. Once the stencil is bent it can be difficult to flatten it again.
- Our stencils are designed for use on food but can be used for crafting. If you do use them for crafting please remember that you cannot then use them on food.
Using lustre dust or tints
- Roll out your sugarpaste (fondant), then place your stencil on top and roll over once or twice to stick the stencil down. Then using a brush or sponge apply lustre dust or tint. Lift the stencil gently up and away. Using a cutter cut the sugarpaste to size.
- If applying lustre dusts to royal icing or something that you cannot roll upon, then gently place the stencil on top and either using a finger or a sponge to hold it gently in place. Do not place your stencil on wet royal icing as when you lift it you will pull royal icing up with it. Once the royal icing has set gently place the stencil on top. If you find that it is lifting or difficult to keep flat, use a little bit of Trex or Crisco (white vegetable fat) to stick the stencil down.Then use a brush or sponge to apply the lustre dust or tint.
Using royal icing
- If using store bought royal icing powder simply follow the instruction to mix it up.
- When using royal icing do not roll the stencil onto sugarpaste as it will fill the gaps of the stencil, simply place the stencil on top. Spread a little bit of royal icing on top of the stencil, using your hand to hold the stencil in place, and then scrap the royal icing off - you should see the design of the stencil but don't scrap too hard.
Stencilling onto the side of a cake
Stencilling directly onto the side of cake requires a bit of practise. We would always recommend practicing on a dummy cake before attempting for the first time on a covered cake.
- Pinning the stencil to the side of the cake - best for royal icing. Place pins inside the design of the stencil, do not push through the actual plastic of the stencil, and line up the stencil on the cake. Start spreading royal icing from the centre, working towards the edges. As you near the edges, pull the pins out and fill in the design, and therefore the pin hole, with icing. Scrap the royal icing off until you can see the design. Lift the stencil away.
- Using Trex or Crisco (white vegetable fat) to attach the stencil to the side of the cake - best for lustre dusts. You can either rub Trex all over the cake or onto the stencil to hold it in place, though holding it in place will lend stability and prevent the stencil from sliding. Gently apply the dust or tint.
- You can also stencil onto sugarpaste panels which are then placed onto the side of the cake.
